Elongation at break was significantly (p &lt; 0.05) increased by incorporation of black pepper extracts, while tensile strength water vapor permeability, film solubility and transparency were decreased. The color of edible films were also affected by the addition of black pepper extracts, the results showed that increasing of black pepper extracts resulted in a darker and more yellowish. Application the antimicrobial film in commercial chicken ham wrapped by antimicrobial films was determined. The results showed that, selected product wrapped with HPMC film incorporated with black pepper extracts had lower and lesser changed in quality of food products. Regarding to the effect of antimicrobial films on sensory scores of food products, the results showed that chicken ham wrapped with HPMC films incorporated with pepper extracts received a higher score in term of flavor, odor, appearance and overall acceptability than the chicken ham wrapped with edible HPMC films incorporated with pepper extracts.\u00a0 In addition food samples wrapped with HPMC films incorporated with pepper extracts demonstrated higher shelf life chicken ham wrapped with edible HPMC films without incorporated with pepper extracts. Our results pointed that incorporation of pepper extracts as a natural antibacterial agent has a potential to be used as shelf-life extension of foods.<\/span><\/p><p dir=\"ltr\" style=\"line-height:
